  1. Heat oil in a large skillet. Add onions, celery and garlic and sauté until transparent. Cook orzo according to package directions, using chicken broth instead of water. During last 2 minutes of cooking time, add spinach. Drain well in a colander. Add beans, onion mixture, and pepper. Mix gently until well combined.

  1. In a medium bowl, combine ground meat, rice, onion, salt and pepper; mix well. Shape into 1-inch balls. Place in slow cooker or sauce pan.
  2. Combine enchilada sauce and water; pour over the meatballs.
  3. Cover and cook (5 1/2 to 6 1/2 hours on low in slow cooker) 35 minutes on stove. Check during cooking time and add water if needed.
