  1. Blanch (cook in boiling water for 3 minutes) broccoli. Drain off water. Cut off small florets and coarsely chop enough remaining broccoli stems to equal 2 cups.
  2. Heat oil in a medium pot over medium heat. Saute the onion and celery until soft, about 5 minutes.
  3. Whisk in flour and cook 1 minute. Add the broth and evaporated milk. Cook, stirring constantly, until the mixture simmers and thickens, about 5 minutes. If you don’t have enough evaporated milk to make soup creamy, add some regular milk, ½ cup at a time.
  4. Add the chopped broccoli, cheese, pepper, nutmeg and salt, to taste. Stir until the cheese melts and the soup is heated through, about 3 minutes. Serve about 1 cup per person topped with broccoli florets. (Note: if using the 5 oz. evaporated milk, add another ½ cup of ‘regular’ milk to bring the amount of liquid to about 12 oz.).

  1. Wash and chop cabbage.
  2. Over medium heat, brown the onion and ground meat. Drain and discard the grease.
  3. Add the cabbage, tomato sauce, water, garlic, salt and pepper.
  4. Bring to a boil, reduce heat, cover and simmer about 30 minutes or until cabbage is tender.

  1. Cook pasta according to directions.
  2. In a large skillet, melt 2 tbsp of butter then add onions and saute for 5 minutes.
  3. Chop cabbage into bite-size pieces. Place in a skillet with the rest of the butter and cook cabbage until tender.
  4. Drain the pasta and add it to the skillet. Add salt and pepper to taste.

  1. Prepare 6 servings of instant mashed potatoes according to box directions. Preheat oven to 350 degrees. Lightly grease a medium baking dish.
  2. Heat 1 tbsp oil in a large skillet over medium heat. Cook and stir ground meat and onion until fully cooked. Add gravy; stir often, until gravy is thick and bubbly.
  3. Add meat mixture to the baking dish. Next, layer the vegetables and top with the mashed potatoes. Bake 20-25 minutes until the dish is heated through and the potatoes are golden on the top.
Recipe Notes

TIP: Shepherd's Pie is very versatile! In place of ground chicken, cubed left-over chicken or turkey can be used. Or cooked, ground sausage or beef with beef gravy. Or left-over roast beef with gravy.
